Nero del Cornia
Wine produced in Suvereto (LI) - Tuscany – Italy
COLOUR: intense ruby red
AROMA: cherry and morello cherry, with scents of Mediterranean scrub
TASTE: well-developed, elegant and persuasive
FOOD PAIRING: ideal with meat, pasta, game dishes and cheeses.
SERVING TEMPERATURE: 16 - 18 °
METHOD OF SERVING: Serve in large glasses and uncork, if possible, a few minutes before serving.
GRAPE VARIETIES: Predominantly Merlot, and a small percentage of Cabernet Franc.
HARVEST: strictly by hand.
VINIFICATION: the grapes are vinified in small containers to facilitate the extraction of the components of the skin, fermentation is performed with natural yeasts on the skins to capture the characteristics of the territory and lasts for about 20 days with punching and short pumping over
MATURATION: the wine matures in concrete tanks and during the period is decanted three times to clarify and stabilize.
BOTTLING: is made without clarification or filtration processes to maintain the full organoleptic qualities
AGING: at least 6 months in bottle.
PRODUCER'S NOTES: Nero del Cornia takes its name from the river Cornia that runs alongside the vineyards. Here the soil produces particularly rich grapes, which capture to the maximum, the characteristics of the territory of Suvereto and Val di Cornia.
