Organic red IGT wine from Tuscany
COLOUR: intense ruby red.
AROMA: cherry and morello cherry scents on elegant balsamic and spicy notes.
TASTE: wide and enveloping, well developed, elegant and penetrating with discreet tannins and a pleasant freshness.
FOOD PAIRING: Ideal with mushrooms, red meat and game dishes.
SERVING TEMPERATURE: 16 - 18 ° C
SERVING METHOD: Serve in large glasses and uncork, if possible, a few minutes before serving.
GRAPE VARIETIES: Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot and Malbec.
HARVEST: strictly by hand.
VINIFICATION: the grapes are vinified in small containers to facilitate the extraction of the components of the skin. The fermentation is carried out with natural yeasts respecting the terroir, with the wine remaining on the skins for at least 20 days, during which are carried out fullings and very short pumping over.
MATURATION: the wine is aged in small French oak barrels for about 6 months.
BOTTLING: it is done without clarification or filtration processes to maintain the full organoleptic qualities.
AGING: at least 6 months in bottle.
PRODUCER'S NOTES: The name Colle Ai Venti ("Hill of the Winds") derives from the position of the vineyards, which are exposed to the sea breezes, which helps to protect the vineyards from mold and improve ripeness.
